Marinade Ingredients
- 30 ml Oil
- 5 ml Turmeric
- 5 ml Chili powder
- 30 ml Dhana jeeru powder
- 5 ml Salt

Instructions
- Mix the marinade ingredients first, and then evenly coat fish pieces.
- Cover and refrigerate 4-6 hours.
- When ready to cook, add oil to frying pan, and fry moderately fast.
- Serve with lemon / lime quarters and / or chutney
Recipe Notes
- White, non-oily fish works best. If using frozen fish, ensure the defrosted fish is not water-logged. Drain and dry thoroughly, otherwise hard to get a good crust.
- The fish cooks best if each piece is of uniform thickness. Hence steaks are better than boneless fillets. Besides, the bone in the steak holds the flesh better during frying.
- Do not skimp on the amount of oil used for shallow frying.
- Usual reminders about not cooking fish too long, or it will dry out, do not crowd fish in frying pan.
