  1. Heat oil at medium heat in a deep, heavy-based cooking pot.
  2. Reduce heat to low. Add Garlic and Green Chilies and fry gently (without burning) for 1-2 minutes.
  3. Add all the remaining dry masala ingredients and continue frying gently for an additional 1-2 minutes.
  4. Add Tomatoes Stir thoroughly, increase heat to medium and cook until tomtato becomes mushy.
  5. Add salt after the vegetables are cooked.
  6. Add the Crabs, mix thoroughly, and cook for 15-20 minutes covered.
  7. If you want a soupier gravy (“surwa”) then add the desired amount of hot water and cook until incorporated (a few minutes). Adjust salt.
  8. When cooked, remove from heat, add Dhana, and let sit covered for an hour or so.
Recipe Notes

Sometimes you can also add an eggplant to add bulk to the curry.
