Instructions
  1. In a shallow frying pan, dry roast the Masala Paste ingredients. Allow to cool, and then grind into a paste. Keep it aside.
  2. In a shallow frying pan, dry roast the Spice Powder ingredients. Allow to cool, and then grind into a very fine powder. Keep it aside.
  3. In a heavy bottomed pot or non-stick pot, heat oil.
  4. Add onion and fry until golden.
  5. Add masala paste and dry spices and fry the spices well until the oil starts to float.
  6. Add the duck pieces and salt and mix well on high heat. Cook uncovered on medium heat for about 5 minutes, stirring occasionally until the meat is browned.
  7. Cover the pot and continue cooking on very low heat until the meat is tender (about 1 hour), stirring occasionally.
Recipe Notes
  • ┬áPrepare the spices before hand.
  • Do not use turmeric in this recipe, otherwise you will not get the dark brown colour.
