Instructions
  1. Add oil to a frying pan and place on medium heat.
  2. When oil is hot, add the Rai seeds, cover with lid, and fry gently until the seeds have popped. (The oil should be very fragrant by now.) Immediately turn heat to low and add Onions, and Bok Choy (optional). Stir and continue frying with lid on until the vegetables are translucent.
  3. Add rice, and salt and stir until it is thoroughly mixed with the vegetables. If the rice is dry and clumped, add the water to moisten. Cover lid and fry on low heat until rice is heated through.
  4. Remove from heat and serve.
Recipe Notes
  1. This dish is ideal for using up leftover rice. I have liked it very much because it is simple, the taste is mild and yet pleasanter than plain leftover rice. At times, I have eaten this dish with mango or lemon pickle as the only accompaniment.
